  • 1 lb. 2 oz. chicken breast

  • 2 cups finely shredded Chinese cabbage
  • 1 cup finely shredded red cabbage
  • 1 cup finely shredded fennel
  • 1/4 cup chopped dill
  • 1/4 cup chopped Italian parsely
  • 2 radishes (julienned)
  • 1 tablespoon toasted sunflower seeds
  • 1 tablespoon toasted buckwheat groats
  • 1 tablespoon toasted pumpkin seeds

Preparation and Cooking Instructions

First, place the chicken breast in a saucepan and add coconut cream.  Next, top up with water so the chicken is completely covered with liquid.  Bring to a boil and then reduce to simmer for 12-15 minutes until chicken is cooked through.  Leave the chicken to rest in the liquid for about 5 minutes and then remove and shred with a fork.

In a separate bowl, combine both types of cabbage with the fennel, dill, and parsely.  Next, toss to combine and then separate into two bowls.  Top with shredded chicken, radish, sunflower seeds, buckwheat groats and pumpkin seeds.  Lastly, season with salt/pepper to taste and add your favorite salad dressing.
