Ingredients

1 Whole Head of Cauliflower

2 Large Onions Cut Into Wedges (may substitute with 4 smaller onions as well)

1 Fennel Bulb (cut into wedges)

6 Garlic Cloves

Olive Oil Spray

1 Potato Chopped

2 Tbsp. Thyme Leaves

2 tsp. of Ground Cardamom

2 tsp. of Ground Cumin

1 tsp. Paprika

4 Cups of Chicken Broth/Stock

Parsley, Feta Cheese, and Hazelnuts, for topping

Cooking/Preparation

Line 2 large baking trays with baking paper and preheat over to 400 degrees.

Chop cauliflower head into 1 1/2 in pieces.  Next, spread the cauliflower pieces, onion wedges, whole garlic cloves, and fennel wedges on the lined trays and then season to taste with salt and pepper.

Spray the ingredients with olive oil and roast for around 40 minutes until the vegetables are lightly golden/brown.

Next, put the roasted vegetables into a large saucepan while removing the soft roasted garlic from the skin.  Add in potato, thyme, cardamom, cumin, paprika and chicken broth.  If necessary, you can add in a little extra water to ensure all vegetables are covered/submersed.

Bring the ingredients to a boil and then reduce heat and simmer for about 30 minutes or so.  Next, mix with a handheld blender until very smooth.  For a creamier soup, add in milk to reach desired texture.  Top each serving with chopped parsley, crumbled feta and chopped hazelnuts.  Enjoy!
