1 sweet potato, chopped

olive oil for roasting and frying

1 brown onion, thinly sliced

7 oz. Swiss brown mushrooms (coarsely chopped)

12 eggs

3/4 cup of milk

1/2 cup of grated cheddar cheese (or substitute in your favorite)

1 zucchini, grated

1 cup of baby spinach leaves

1 tablespoon thyme leaves

3.5 ounces of cherry tomatoes, halved

3 ounces goat’s cheese

Preparation and Cooking

First, preheat oven to 400 degrees.  Next, line a baking tray with baking paper.

Spread the sweet potato on the tray and then spray with olive oil and season to taste with salt and pepper.  Next, roast for about 15 minutes.  Meanwhile, cook the onion and mushrooms in medium frying pan with 1 tablespoon of oil for about 10 minutes or until soft.

Then, line a large baking dish with baking paper and spray with oil.  Turn the oven down to 350 degrees.

Next, whisk the eggs in a bowl and add milk, grated cheese, and grated zucchini.  Then, stir until fully mixed.

Spread the onions, mushrooms, baby spinach leaves and roasted sweet potatoes in the baking dish and then pour over the egg mixture.  Next, top with thyme leaves, cherry tomatoes, and crumble goat’s cheese over all.  Then, bake for about 50 minutes until the eggs have set.

Lastly, slice and serve with a salad and high grade tomato chutney.
