Mushroom and Ricotta Crepes

This low carb recipe is rich in protein, magnesium and B vitamins.  Equally important, they taste great and can be frozen and reheated with ease.   Feel free to serve them for breakfast, lunch or dinner for a great low carb meal that is very filling.  Moreover, the crepes are made with healthy and nutritous  buckwheat and 100% wheat and gluten free.   Ready to try some delicious mushroom and ricotta crepes in just 30 minutes?  Let’s get started!

Serves:  2

What You Need to Make This Low Carb Recipe

1 tablespoon olive oil

1 French shallot, finely chopped

1 tablespoon butter

10 1/2 ounces of brown mushrooms cut into quarters

1 teaspoon coriander seeds

1 teaspoon sage leaves, finely chopped

1 teaspoon rosemary leaves, finely chopped

1 handful of arugula leaves

1 tablespoon chopped walnuts 3 teaspoons ricotta cheese

3/4 cup buckwheat flour

2 eggs

1 cup of milk

Additional butter for frying crepes

Preparation and Cooking Instructions

Add olive oil and finely chopped shallots into a medium frying pain and cook on medium heat for a few minutes.  Next, add the butter, mushrooms, coriander seeds, sage and resemary and slowly cook for about 10 minutes.  Last, add in a few tablespoons of water to get the pan juices flowing.

Next, let’s make the crepes while this is cooking.  Combine the buckwheat flour, milk, and 2 eggs into a bowl and whisk together.  Next, melt some butter in a medium frying pan.  Pour in a small amount of your batter and spread evenly while covering the pan as thinly as possible.  Next, cook until you see bubbles forming and then flip over.  They should only take a few minutes per side and then repeat to make second crepe.

Finally, let’s prep the final product and eat!  Place a crepe on each plate and divide the mushroom mixture between them.  Next, just top with some arugula, walnuts and ricotta before folding crepe over and serving!
